Savory Pizza Muffins

Pizza muffins give you the flavors kids ask for in a bundle that fits in a lunchbox. A simple quick-bread batter is seasoned with oregano and garlic, enriched with tomato paste and loaded with mozzarella, Parmesan and chopped sun-dried tomatoes. There is no yeast and no rolling, so they go from bowl to oven in 15 minutes. They freeze well and taste good cold.

Instructions

  1. Heat the oven to 200°C (400°F). Grease a 12-cup muffin tin or line it with paper cases.
  2. Whisk the flour, baking powder, salt, oregano and garlic powder together in a large bowl.
  3. In a jug, whisk the eggs, milk, olive oil and tomato paste until smooth.
  4. Pour the wet mixture into the dry ingredients. Add 90 g of the mozzarella, the Parmesan and the sun-dried tomatoes. Stir with a few strokes until just combined. Lumps are fine.
  5. Divide the batter among the 12 cups, filling them about three-quarters full. Sprinkle the remaining 30 g of mozzarella on top.
  6. Bake for 18 to 22 minutes, until puffed and golden and a skewer in the center comes out clean.
  7. Cool in the tin for 5 minutes, then move to a rack. Serve warm or at room temperature.

Tips

  • Do not overmix. Stirring until just combined keeps the muffins tender, while a smooth batter makes them tough.
  • For a variation, add 80 g (1/2 cup) of chopped black olives or well-drained roasted red pepper, or a handful of finely chopped spinach squeezed dry. Serve with warm tomato sauce for dipping.
