Pork, apples and cabbage are a classic cold-weather trio, and they roast well together on one pan. The cabbage wedges go in first so they have time to soften and brown, and the chops and apple wedges follow. A brush of whole-grain mustard, vinegar and a little maple syrup gives the pork a savory crust. The apples soak up the juices and add gentle sweetness to every bite.
Instructions
- Heat the oven to 220°C (425°F). Toss the cabbage wedges and onion with 2 tablespoons of the oil, the thyme and 1/2 teaspoon of salt on a large rimmed sheet pan. Lay the cabbage cut side down.
- Roast the cabbage and onion for 12 minutes while you prepare the pork.
- Pat the chops dry. Stir the mustard, vinegar, maple syrup, remaining oil, 3/4 teaspoon of salt and the pepper together and brush it over both sides of the chops.
- Take out the pan, turn the cabbage over and add the apple wedges. Place the chops on the pan between the vegetables.
- Roast for 14 to 16 minutes, turning the chops once, until they read 63°C (145°F) in the thickest part and the cabbage edges are browned.
- Rest the chops for 5 minutes on the pan. Serve with the vegetables, spooning the pan juices over the top.
Tips
- Use firm apples that hold their shape, such as Granny Smith or Braeburn types. Soft apples will collapse into the pan.
- Thinner chops cook faster, so check them after 10 minutes. Trim the cabbage core only partly, because it holds the wedges together.
