Sheet-Pan Potato, Bacon and Kale Hash with Baked Eggs

Hash usually means standing over a skillet and stirring. This version hands the work to the oven: potatoes, red onion and bacon roast on a hot sheet pan until crisp, kale goes on to frizzle at the edges, and eggs are cracked into hollows at the end so they bake right in the hash. One pan, one oven and about forty minutes later, breakfast is ready for four, with very little washing up.

Instructions

  1. Heat the oven to 220°C (425°F) with a large rimmed baking sheet on the middle rack. A hot pan helps the potatoes crisp.
  2. Toss the potatoes and onion with 2 tbsp of the oil, the paprika, salt and pepper. Carefully tip them onto the hot sheet and spread them out in one layer. Roast for 20 minutes, stirring once halfway.
  3. Stir in the bacon pieces and roast for 10 minutes more, until the potatoes are golden and the bacon is starting to crisp.
  4. Toss the kale with the remaining oil. Scatter it over the pan and roast for 4 to 5 minutes, until the leaves are crisp at the edges.
  5. Use a spoon to make 4 wells in the hash and crack an egg into each. Season the eggs with salt and pepper. Bake for 6 to 8 minutes, until the whites are set and the yolks are still soft.
  6. Scatter with the chives and serve straight from the pan, with hot sauce if you like.

Tips

  • Cut the potatoes into even cubes so they cook at the same speed. Waxy varieties hold their shape and crisp well, while floury potatoes tend to break apart.
  • No kale? Stir in spinach at the very end, or add sliced bell peppers along with the bacon.

Questions and answers

How do I get potatoes crispy on a sheet pan?

Preheat the pan, use enough oil to coat every cube and spread the potatoes in a single layer without crowding. Crowded potatoes steam and stay soft.

Can I make the hash ahead of time?

Roast the potatoes, onion and bacon up to 2 days ahead and refrigerate. Reheat on a hot sheet pan for 10 minutes, add the kale and eggs, and bake as written.

How do I keep the yolks runny?

Take the pan out as soon as the whites are set and no longer translucent, usually 6 to 8 minutes. The yolks keep cooking a little in the hot pan, so serve right away.

How long does it take to make Sheet-Pan Potato, Bacon and Kale Hash with Baked Eggs?
