Sweet apples and onions suit fatty sausages as well as they suit pork chops. The sausages are browned first, then the onions cook slowly in the pan until soft and golden. Apples and a splash of cider go in next, and everything simmers into a glossy sauce with thyme and a little mustard. Choose firm apples and plain pork sausages with some herbs. Serve with mashed potatoes to catch the sauce.
Instructions
- Heat the oil in a large deep skillet over medium heat. Brown the sausages for 8 minutes, turning, until golden on all sides. Move them to a plate. They are not cooked through yet.
- Add the butter, onions and salt to the pan. Cook for 10 minutes, stirring often, until the onions are soft and golden.
- Add the apples and thyme and cook for 3 minutes.
- Pour in the cider and stock and stir in the mustard. Return the sausages, cover and simmer over medium-low heat for 10 minutes, until the sausages reach 71°C (160°F) and the apples are tender.
- Uncover and simmer for 3 to 4 minutes until the sauce is reduced and glossy. Stir in the vinegar and pepper, taste for salt and serve.
Tips
- Use plain pork sausages, or ones flavored with sage or leek. Strongly spiced sausages overpower the apples.
- If you use apple juice instead of cider, add another 1 teaspoon of vinegar to balance the sweetness. A spoonful of cream at the end makes a richer sauce.
