Skutni Štruklji (Slovenian Cottage Cheese Rolls)

Štruklji are rolled dumplings found all over Slovenia, with fillings that range from walnut to tarragon. The cottage cheese version is the most common: a thin dough is stretched out, spread with a creamy curd and chive filling and rolled up, then simmered wrapped in a cloth. Slices are topped with buttered breadcrumbs. They are eaten as a main with salad or soup, or as a side, and leftovers fry well.

Instructions

  1. Mix the flour and salt. Add the egg, oil and enough lukewarm water to make a soft dough. Knead for 8 minutes until smooth, cover and rest for 30 minutes.
  2. Mix the curd cheese, eggs, sour cream, salt and chives until smooth.
  3. Roll the dough on a floured cloth, then stretch it gently with the backs of your hands until it is thin and about 40 x 50 cm (16 x 20 in). Brush it with the melted butter.
  4. Spread the filling over the dough, leaving a 2 cm (3/4 in) border. Using the cloth, roll up the dough like a jelly roll.
  5. Cut the roll in half to fit your pot. Wrap each piece tightly in a clean tea towel or muslin and tie the ends with string.
  6. Lower the rolls into a large pot of simmering salted water. Cook gently for 30 to 35 minutes, turning once, until firm.
  7. Meanwhile, melt the 60 g of butter in a pan and fry the breadcrumbs over medium heat for 4 to 5 minutes, until golden.
  8. Lift out the rolls, unwrap them carefully and rest for 5 minutes. Cut into 3 cm (1 1/4 in) slices and spoon the buttered crumbs over.

Tips

  • To bake instead, roll the filled dough without the cloth, place it in a buttered dish, brush with sour cream and bake at 200°C (400°F) for 35 minutes.
  • For sweet štruklji, leave out the salt and chives and add sugar, vanilla, lemon zest and raisins to the cheese.
