Smoked Sausage and Broccoli Stir-Fry

Fully cooked smoked sausage is one of the handiest ingredients for a rushed dinner, because it only needs browning and heating through. Here it is stir-fried with broccoli and red pepper in a sauce of honey, soy sauce and mustard that is both sweet and sharp. Steaming the broccoli briefly in the pan keeps it bright green and tender but still crisp. The whole dish takes about 20 minutes, and it is good over rice or noodles.

Instructions

  1. Stir the sauce ingredients together in a small bowl until the cornstarch dissolves.
  2. Heat 1 tbsp of the oil in a large skillet or wok over medium-high heat. Brown the sausage for 3 to 4 minutes, until crisp at the edges, then move it to a plate.
  3. Add the remaining oil, the broccoli and the pepper. Stir-fry for 2 minutes, then add the 3 tbsp of water, cover and steam for 2 minutes until the broccoli is bright green.
  4. Uncover, add the garlic and ginger and stir for 30 seconds until the water has evaporated.
  5. Return the sausage to the pan, pour in the sauce and cook, stirring, for 1 to 2 minutes until it thickens and coats everything.
  6. Serve at once over steamed rice or noodles.

Tips

  • Cut the broccoli into small, even florets, and peel the stems and slice them into thin coins so nothing goes to waste.
  • Use smoked chicken or turkey sausage for a leaner dish. Add 1/2 tsp of chili flakes for heat.
