This is old-fashioned home cooking at its most useful: smoked sausage, potatoes and green beans simmered together until the beans turn soft and savory and the potatoes soak up the smoky broth. A little tomato paste and smoked paprika deepen the flavor, and a splash of vinegar at the end brightens everything. It uses inexpensive ingredients, cooks in one pot in under an hour, and feeds a family with leftovers for lunch.
Instructions
- Heat the oil in a large pot over medium-high heat. Brown the sausage for 5 minutes until the edges are golden, then move it to a plate, leaving the fat in the pot.
- Add the onion to the pot and cook for 6 minutes until soft. Stir in the garlic, smoked paprika, thyme and tomato paste for 1 minute.
- Add the tomatoes, stock, bay leaves and potatoes. Bring to a boil, then reduce the heat and simmer partly covered for 12 minutes.
- Add the green beans and cook for 12 to 15 minutes more, until the beans are very tender and the potatoes are done. Return the sausage to the pot for the last 5 minutes.
- Mash a few potato chunks against the side of the pot to thicken the broth. Remove the bay leaves and stir in the vinegar and pepper. Taste before adding any salt, as the sausage is salty.
- Serve hot, scattered with parsley.
Tips
- Green beans cooked for 12 to 15 minutes turn soft and olive-colored, which suits this stew. For crisper beans, add them for the last 6 minutes only.
- Smoked turkey or chicken sausage makes a lighter version. Cut it the same way and brown it for a little less time.
Questions and answers
Can I use frozen green beans in this stew?
Yes. Add them straight from the freezer and cook for about 10 minutes, until tender. Cut green beans work best, as they fit on a spoon.

A fully cooked smoked sausage, such as smoked pork or turkey sausage, is easiest. If you use fresh sausage, brown it and cook it through to 71°C (160°F) before adding the vegetables.
Can I make sausage and green bean stew in a slow cooker?
Yes. Brown the sausage and onion first, then cook everything except the green beans on low for 6 hours. Add the beans for the last 1 1/2 hours.
