This is the hot chocolate you sip slowly from a small cup, closer to warm chocolate pudding than to a milky drink. Real dark chocolate melts into milk and cream, and a little cornstarch gives it a velvety body that coats the spoon. It is intensely rich, so a little goes a long way. Serve it after dinner or on a cold afternoon, with a glass of water on the side.
Instructions
- Stir the cornstarch into 3 tablespoons (45 ml) of the cold milk in a small bowl until you have a smooth slurry.
- Pour the rest of the milk and the cream into a small saucepan. Add the sugar and salt and heat over medium-low heat until steaming. Do not let it boil.
- Whisk in the cornstarch slurry and cook for 1 to 2 minutes, stirring constantly, until the milk thickens slightly, like thin custard.
- Take the pan off the heat. Add the chopped chocolate, wait 1 minute, then whisk until completely melted and glossy.
- Stir in the vanilla. If you want it thicker, return the pan to very low heat for 1 more minute, stirring all the time.
- Pour into three small cups and serve right away, with spoons.
Tips
- Use a bar of chocolate you would happily eat on its own. Chocolate chips contain stabilizers and melt less smoothly.
- Add a pinch of chili flakes, a strip of orange zest or a spoonful of strong coffee for a variation. Remove any zest before serving.
Questions and answers
How do I make hot chocolate thicker?
Add cornstarch as in this recipe, use more chocolate, or replace some of the milk with cream. Cooking it for an extra minute while stirring thickens it further.
Can I reheat thick hot chocolate?
Yes. It sets as it cools, so warm it gently in a pan with a splash of milk, whisking until smooth. It keeps in the fridge for up to 3 days.
Can I use milk chocolate instead of dark?
Yes, but use 100 g and leave out the sugar, since milk chocolate is sweeter and has less cocoa. The drink will be sweeter and a little thinner.
