Tumbet is a Mallorcan dish of fried potatoes, eggplant and peppers layered and topped with a thick tomato sauce. Each vegetable is fried separately so it keeps its own texture, then they are stacked and warmed together. People eat it as a side dish or as a main course with bread. It is traditionally a summer dish, made when peppers and eggplants are cheapest.
Instructions
- Make the sauce: cook the onion in the oil over medium heat for 8 minutes until soft. Add the garlic for 1 minute, then the tomatoes, sugar, salt and bay leaf. Simmer for 25 to 30 minutes, until thick. Discard the bay leaf.
- Heat 1 cm (1/2 in) of the frying oil in a wide skillet over medium heat. Fry the potatoes in batches for 8 to 10 minutes until tender and lightly golden. Drain on paper towels and salt lightly.
- Fry the eggplant slices in batches, 3 to 4 minutes per side, until golden and soft. Drain on paper towels and salt lightly.
- Fry the pepper strips for 8 to 10 minutes until soft and slightly blistered. Drain.
- Heat the oven to 180°C (350°F). In a 25 x 30 cm (10 x 12 in) baking dish, layer the potatoes, then the eggplant, then the peppers. Spoon the tomato sauce over the top.
- Bake for 20 to 25 minutes, until bubbling at the edges. Rest for 10 minutes and serve warm or at room temperature.
Tips
- Fry the vegetables separately, since they cook at different speeds. Drain them well on paper towels and the dish will not taste greasy.
- To use less oil, roast the eggplant and peppers on trays at 220°C (425°F) for 25 minutes, and bake the potato slices tossed in a little oil.
