Tuna Pasta Salad with Peas, Sweet Corn and Lemon Mayonnaise

This is a pantry-friendly lunch that kids and adults both eat: pasta, tuna, peas and sweet corn bound with a lemony mayonnaise dressing. The frozen peas go into the pasta water for the last two minutes, so there is only one pot to wash. The lemon cuts through the richness of the mayonnaise, and a spoonful of mustard gives it backbone. It keeps well in the fridge, so it is good for packed lunches.

Instructions

  1. Cook the pasta in a large pot of salted boiling water for 2 minutes less than the packet time. Add the peas to the pot for the last 2 minutes. Drain, rinse under cold water until cool and shake well.
  2. In a large bowl, stir together the mayonnaise, olive oil, lemon zest, lemon juice, mustard, salt and pepper.
  3. Flake the drained tuna into the bowl with a fork, breaking up any large chunks.
  4. Add the cooled pasta and peas, the sweet corn, spring onions and parsley.
  5. Toss until everything is evenly coated. Taste and adjust with more lemon juice, salt or pepper.
  6. Serve right away, or chill for 30 minutes to let the flavors blend.

Tips

  • Tuna in olive oil is richer and more tender than tuna in water. If you use it, drain it well and cut the olive oil in the dressing to 1 tablespoon.
  • Swap half the mayonnaise for thick plain yogurt for a lighter dressing. Diced cucumber, cherry tomatoes or capers are good additions.
