Amandazi are the fried doughnuts that Burundians eat for breakfast or as a snack with a cup of sweet tea. The dough is soft and lightly sweetened, made with flour, milk and a little egg, and sometimes perfumed with cardamom. It is cut into triangles or squares and fried until puffed and golden. They are best eaten the day they are made, still warm.
Instructions
- Mix the flour, sugar, baking powder, salt and cardamom in a large bowl.
- Whisk the egg with the warm milk and melted butter. Pour into the dry mixture and stir to a soft dough, adding a spoonful of milk if it is dry.
- Knead on a floured surface for 3 to 4 minutes until smooth. Cover and rest for 30 minutes.
- Roll the dough out to 1 cm (1/2 in) thick. Cut into squares, then halve each square diagonally to make triangles.
- Heat the oil in a deep pot to 175°C (350°F). Fry 5 or 6 pieces at a time for 2 to 3 minutes per side until puffed and golden brown.
- Lift out with a slotted spoon and drain on paper towels. Serve warm.
Tips
- Keep the oil at 175°C (350°F). If it is too cool the amandazi soak up oil, and if it is too hot they brown before the center cooks.
- For a dairy-free version, replace the milk with water and the butter with oil. The dough will be slightly less rich.
