Easy Chocolate Truffles

Chocolate truffles look like something from a specialty shop, but a basic ganache truffle is only chocolate and cream. The hot cream is poured over the chopped chocolate and stirred smooth, then the mixture is chilled until firm, rolled into balls and coated in cocoa. The quality of the chocolate shows in the result, so use a bar you would enjoy eating on its own. They keep well in the fridge, which makes them good for homemade gifts and the end of a dinner party.

Instructions

  1. Put the chopped chocolate in a heatproof bowl.
  2. Heat the cream in a small pan until it just starts to steam at the edges and tiny bubbles form. Do not let it boil.
  3. Pour the hot cream over the chocolate and leave it for 2 minutes without stirring. Then stir slowly from the center outward until the mixture is smooth and glossy.
  4. Stir in the butter, vanilla and salt. Cover and chill for 2 hours, until firm enough to scoop but not rock hard.
  5. Scoop level tablespoons of ganache, about 15 g each, and roll them quickly between cool palms into balls.
  6. Roll each truffle in cocoa powder, or in nuts or sprinkles. Chill for 30 minutes before serving.

Tips

  • Rinse your hands under cold water and dry them before rolling. Warm hands melt the ganache, so work fast and re-chill the mixture if it softens.
  • Flavor the ganache with 1 teaspoon of orange zest, 1/2 teaspoon of ground cinnamon or 1 teaspoon of instant coffee dissolved in the hot cream.

Questions and answers

Why did my truffle mixture split or turn greasy?

The cream was too hot or the mixture was stirred too hard. Whisk in a tablespoon of warm cream, a little at a time, until it comes back together.

How long do homemade chocolate truffles last?

Up to 2 weeks in an airtight container in the fridge, or 3 months in the freezer. Let them stand for 10 minutes before serving.

Can I use milk chocolate for truffles?

Yes, but use 300 g of milk chocolate with the same amount of cream. Milk chocolate is softer, so it needs more chocolate to set firm.
