Baked Apples with Oats and Cinnamon

Baked apples are one of the simplest warm desserts: whole apples, cored and filled with oats, nuts, raisins and cinnamon, then baked until they collapse into soft, caramelized bowls. They need almost no preparation and use pantry ingredients, and the kitchen smells wonderful while they bake. Choose firm apples that hold their shape. Serve with yogurt, cream or custard, spooning the syrupy juices from the dish over the top.

Instructions

  1. Heat the oven to 180°C (350°F). Wash the apples. Cut out the core from the top with a corer or a small knife, going about three-quarters of the way down so the bottom stays closed. Widen the hole to about 3 cm (1 1/4 in).
  2. Score a line around the middle of each apple, cutting only through the skin. This stops the apples from splitting as they bake.
  3. Mix the oats, nuts, raisins, brown sugar, cinnamon, butter and maple syrup in a small bowl until crumbly.
  4. Stand the apples in a baking dish just large enough to hold them. Pack the filling into each cavity and pile any extra on top. Pour the apple juice into the dish around the apples.
  5. Bake for 40 to 50 minutes, basting once with the juices, until a knife slides in easily and the skins are wrinkled.
  6. Rest for 5 minutes, then serve warm with the pan juices spooned over and a spoonful of yogurt or cream.

Tips

  • If an apple wobbles, slice a thin piece off the bottom so it sits flat, without cutting into the cavity.
  • Swap the raisins for chopped dried figs or dates, and add a pinch of ground ginger or cardamom to the filling.

Questions and answers

Which apples are best for baking whole?

Choose firm, medium to large apples with a balance of sweet and tart. Soft varieties collapse and turn mushy before the center cooks.

Yes. Fill the apples up to a day ahead, cover and chill, then bake when needed. Cooked leftovers reheat in a 160°C (325°F) oven for 10 minutes.

How do I know when baked apples are done?

The skins should wrinkle and a knife should slide into the flesh with no resistance. This usually takes 40 to 50 minutes, depending on the size.
