Chicken bites are a snack that many children will happily eat, and this baked version skips the deep fryer. The chicken is marinated briefly in soy sauce, coated in panko and sesame seeds and baked on a rack so the underside stays crisp. A quick honey glaze adds shine and sweetness. Serve them with cucumber sticks as a lunch, or on a platter with toothpicks for a party.
Instructions
- Toss the chicken with the 2 tablespoons of soy sauce and the garlic in a bowl and leave for 15 minutes. Heat the oven to 220°C (425°F) and set a wire rack on a lined baking tray.
- Mix the panko, sesame seeds and salt in a shallow dish. Put the beaten eggs in a second dish.
- Dip each piece of chicken in the egg, then press it into the panko mixture to coat all sides. Set the pieces on the rack, not touching.
- Brush or spray the coated chicken lightly with the oil.
- Bake for 14 to 18 minutes, turning once, until golden and cooked through. The thickest piece should read 74°C (165°F) and show no pink.
- While the chicken bakes, simmer the honey, 1 tablespoon of soy sauce and the vinegar in a small pan for 2 minutes, until syrupy. Stir in the sesame oil.
- Toss the hot chicken in the glaze, or serve the glaze on the side for dipping, and finish with the spring onions.
Tips
- Cut the chicken into pieces of the same size so they cook evenly. Chicken thighs make juicier bites if you prefer dark meat.
- For a gluten-free version, use tamari and gluten-free breadcrumbs. Check that the rice vinegar and panko labels are also gluten-free.
Questions and answers
Can I make these chicken bites in an air fryer?
Yes. Cook them in a single layer at 190°C (375°F) for 8 to 10 minutes, turning once, until cooked through to 74°C (165°F).
How do I keep baked chicken bites crispy?
Bake on a wire rack, space the pieces apart and add the glaze at the last minute. A wet glaze softens the crumbs if it sits.
