A sausage sizzle is a sausage in a slice of white bread, topped with soft fried onions and a squeeze of tomato or barbecue sauce. It is the food of Australian fundraisers, hardware-store car parks and polling stations on election day. The skill is in the onions, which are cooked slowly on the same hot plate until sweet, and in grilling the sausages gently so they do not split.
Instructions
- Heat a barbecue flat plate or a large heavy frying pan over medium heat and brush with the oil.
- Add the onions and salt. Cook for 15 to 20 minutes, stirring and pushing them around, until soft and golden brown. Move them to a cooler part of the plate to keep warm.
- Add the sausages to the hot plate. Turn them every couple of minutes for 12 to 15 minutes, until browned all over and cooked through to 71°C (160°F).
- Lay a slice of bread flat, set a sausage on one side and pile onions on top. Fold the bread over the sausage, or roll it up.
- Add tomato sauce or barbecue sauce and serve straight away with a napkin.
Tips
- Keep the heat at medium and turn the sausages often. Cooking too hot splits the skins and leaves the middle underdone.
- For the polling-day style, put the onions on top of the sausage, then the sauce, and fold. A soft hot dog roll works if you prefer it to bread.

Because the sausages sizzle on the barbecue plate. The name is used for any outdoor sausage barbecue, especially fundraising ones.
Why is the sausage served in plain bread, not a roll?
