Honey Mustard Glazed Cocktail Sausages

Glazed cocktail sausages show up at parties, buffets and holiday tables because they are easy to eat with a pick and nobody has to think about them. A glaze of honey, two kinds of mustard, soy sauce and smoked paprika coats the sausages and cooks down to a sticky shine in the oven. The whole recipe uses one bowl and one tray. Serve them hot with napkins.

Instructions

  1. Heat the oven to 200°C (400°F). Line a rimmed baking tray with baking paper, because the honey glaze sticks to bare metal.
  2. Whisk the honey, both mustards, soy sauce, vinegar, paprika and garlic powder together in a large bowl.
  3. Add the sausages and toss until every one is coated.
  4. Tip the sausages onto the tray in a single layer with a little space between them. Scrape any extra glaze from the bowl over the top.
  5. Bake for 20 to 25 minutes, turning them every 8 minutes, until the glaze is sticky and bubbling and the sausages are hot through to 74°C (165°F).
  6. Let them cool for 5 minutes, since the glaze is very hot. Pile into a bowl, scrape the sticky bits from the tray over them, sprinkle with sesame seeds and serve with picks.

Tips

  • If you only have raw sausages, cut them into 3 cm (1 1/4 inch) pieces and bake them plain for 15 minutes, until 71°C (160°F) inside. Then toss in the glaze and bake for 10 minutes more.
  • To keep them warm at a party, tip the baked sausages and glaze into a slow cooker on the warm setting for up to 3 hours, stirring now and then.

Questions and answers

Can I make glazed cocktail sausages ahead of time?

Yes. Bake them, cool and refrigerate for up to 3 days. Reheat at 180°C (350°F) for 10 minutes, adding a spoonful of water to the tray to loosen the glaze.

What can I use instead of pork sausages?

Small chicken, turkey or vegetarian sausages work equally well. Check that packaged vegetarian sausages are fully cooked, or bake them plain before glazing.

Can I make the glaze less sweet?

Yes. Use 2 tablespoons of honey and add an extra teaspoon of vinegar. The glaze will be sharper and a little thinner.
