Berry Yogurt Parfaits with Granola

A parfait looks like a restaurant dish but takes about ten minutes. Thick Greek yogurt, lightly sweetened with honey and vanilla, is layered with softly mashed berries and crunchy granola in a glass, so every spoonful has something creamy, something juicy and something crisp. Make the yogurt and berries ahead, and add the granola at the last minute so it stays crunchy.

Instructions

  1. Hull and quarter any large strawberries. Mash about a third of the berries with the honey and lemon juice in a bowl, using a fork, then stir in the rest. Leave for 10 minutes, until juicy.
  2. Stir the yogurt with the honey and vanilla until smooth.
  3. Spoon about 4 tablespoons of yogurt into the bottom of each of four glasses. Add a spoonful of berries with their juice, then a layer of granola.
  4. Repeat the layers once more, finishing with berries and a sprinkle of granola. Serve straight away.

Tips

  • Add the granola at the last minute, or keep it in a separate small container. It stays crisp for about an hour in the yogurt and turns soft overnight.
  • Frozen berries work well out of season. Thaw them in a bowl first, then use the juice as a sauce between the layers.

Questions and answers

Can I make parfaits ahead of time?

Yes. The yogurt and berry layers keep for 2 days in the fridge. Assemble them in jars and add the granola on top just before eating so it stays crunchy.

What is the best yogurt for a parfait?

Thick Greek or strained yogurt holds its layers and tastes rich. Whole-milk plain yogurt also works, but it is looser, so spoon the berries in gently.

How can I make a parfait without added sugar?

Leave out the honey, mash a ripe banana into the yogurt and let the berries sweeten the fruit layer. A little vanilla and cinnamon also make yogurt taste sweeter.

How long does it take to make Berry Yogurt Parfaits with Granola?

About 10 min in total: 10 min of preparation and 0 min of cooking.
