Black Bean and Corn Rice Bowl with Lime Dressing

A bowl like this is the sort of lunch that makes meal prep worthwhile. The rice cooks with lime, the beans simmer with cumin and smoked paprika, and the fresh salsa and green dressing bring crunch and brightness. Everything keeps well in separate containers, so you can build bowls for several days. Add the avocado at the last minute so it stays green.

Instructions

  1. Put the rice, water, lime juice and salt in a pot, bring to a boil, then cover, lower the heat and cook for 15 minutes. Leave covered off the heat for 5 minutes, then fluff with a fork.
  2. Heat the oil in a skillet and cook the onion for 5 minutes. Add the garlic, cumin and paprika for 1 minute.
  3. Add the beans, water and salt, and simmer for 8 to 10 minutes, mashing a few beans with a spoon, until the liquid thickens.
  4. Mix the corn, tomatoes, red onion, chili, lime juice, coriander and salt for the salsa in a bowl and set it aside.
  5. Blend the coriander, oil, lime juice, garlic, water and salt until smooth for the dressing.
  6. Divide the rice among four bowls. Top with beans, salsa and avocado, then drizzle with the lime dressing.

Tips

  • Make the salsa just before serving. Salt draws water out of the tomatoes, so it turns soupy if it sits for hours.
  • Swap the rice for quinoa or cauliflower rice, and add roasted sweet potato cubes or shredded lettuce for more bulk.
