Breakfast Flatbread Pizzas with Eggs, Spinach and Tomato

Breakfast pizza sounds like a novelty, but it is really just toast with more going on. Ready-made flatbreads crisp in a hot oven, then get garlic oil, melted mozzarella, spinach and a cracked egg that bakes until the white sets and the yolk stays soft. Four pizzas fit on two baking sheets and take about twenty-five minutes from start to finish. Cut them into wedges and eat with your hands.

Instructions

  1. Heat the oven to 230°C (450°F). Stir the olive oil with the garlic and a pinch of salt. Lay the flatbreads on two parchment-lined baking sheets.
  2. Brush the flatbreads with the garlic oil and bake for 3 minutes, until the surface just starts to firm up. Take the sheets out of the oven.
  3. Scatter the mozzarella over each flatbread in a ring, leaving a clear circle about 6 cm (2 1/2 inches) wide in the center for the egg. Top the cheese with the spinach and tomatoes.
  4. Crack an egg into the center of each ring, season with salt and pepper and bake for 8 to 10 minutes, until the whites are set, the cheese is bubbling and the edges are golden. The yolks should still be soft.
  5. Sprinkle with chili flakes, if using, cut into wedges and serve right away.

Tips

  • Crack each egg into a small cup first and tip it gently into the ring. It is easier to control than cracking straight onto the pizza, and any stray shell stays in the cup.
  • For a more filling pizza, add sautéed mushrooms or sliced roasted peppers, or swap the spinach for chopped kale.

Questions and answers

Can I use pizza dough instead of flatbread?

Yes. Stretch 4 small portions of dough (about 100 g each) thin, bake the plain crusts for 5 minutes, then add the toppings and the egg and bake for 8 to 10 minutes more.

How do I stop the egg whites running off the pizza?

Build a ring of cheese around the center and crack each egg into a cup first, then tip it gently into the ring. The cheese acts as a dam while the white sets.

Can I prepare breakfast pizzas ahead of time?

Partly. Pre-bake the flatbreads, then top with the cheese and vegetables up to a day ahead and refrigerate. Add the eggs and bake just before serving so the yolks stay soft.
