Uitsmijter (Dutch Open Sandwich with Ham, Cheese and Fried Eggs)

An uitsmijter is a Dutch lunch classic found in cafés across the country: thick slices of buttered bread topped with ham or roast beef and cheese, then crowned with fried eggs. The name literally means bouncer. It is quick to make, very filling and usually served with pickled gherkins, sliced tomato or a small salad, and a spoon of mustard on the side.

Instructions

  1. Butter the bread slices on one side. Lay two slices on each plate, buttered side up.
  2. Top each slice with a slice of ham, then a slice of cheese. For melted cheese, slide the plates under a hot broiler for 1 minute.
  3. Melt the frying butter in a large nonstick pan over medium heat. Crack in the eggs, working in two batches if needed, and fry for about 3 minutes until the whites are set and the yolks are still runny.
  4. Season the eggs with salt and pepper and lift 3 onto each plate, over the sandwiches.
  5. Serve at once with gherkins, tomato slices and mustard.

Tips

  • Fry the eggs gently in butter, because high heat makes the whites rubbery. Spoon a little hot butter over the whites to set them without flipping.
  • Swap the ham for roast beef or crisp bacon. Some cafés also brown the cheese under the broiler for a melted topping.
