Céleri Rémoulade (French Celeriac Salad)

Céleri rémoulade is one of the most common starters in French bistros and at charcuterie counters. Celeriac, the knobbly root of a celery variety, is peeled and cut into very fine matchsticks, then mixed with a mustardy mayonnaise and lemon juice. The result is crunchy, tangy and fresh, and it keeps well in the fridge. Serve it chilled with cold meats, smoked fish or as part of a plate of mixed starters.

Instructions

  1. Fill a large bowl with cold water and half the lemon juice. Peel the celeriac thickly, cutting away all the knobbly skin, and cut it into quarters.
  2. Cut each quarter into thin matchsticks about 3 mm wide with a sharp knife, a mandoline or the julienne blade of a food processor, dropping them into the lemon water as you go.
  3. In a large bowl, whisk the mayonnaise, mustard, vinegar, remaining lemon juice, salt and pepper.
  4. Drain the celeriac well and pat it dry with a clean towel. Fold it into the dressing until fully coated.
  5. Cover and chill for at least 30 minutes. Stir in the parsley, taste for seasoning and serve cold.

Tips

  • Cut the matchsticks fine. Thick pieces stay hard and make the salad heavy, while thin ones soften slightly in the dressing but stay crisp.
  • To lighten the dressing, replace half the mayonnaise with plain yogurt or crème fraîche, or add a spoonful of chopped capers and gherkins.
