A slaw of shredded cabbage and carrot stays crisp far longer than lettuce, which is why it makes such a good filling for wraps that travel. Here it is dressed with oil, lemon, honey and mustard instead of mayonnaise, so it tastes bright rather than heavy. Tossed with cooked chicken and rolled in a soft wrap, it makes a fast lunch from leftovers. The slaw gets better after 30 minutes in the fridge.
Instructions
- Whisk the dressing ingredients in a large bowl until smooth.
- Add the cabbage, carrots, spring onions and herbs and toss well. Leave for 30 minutes so the cabbage softens slightly and absorbs the dressing.
- Add the chicken to the bowl and toss again. Taste and adjust the salt and lemon.
- Warm the wraps for 10 seconds each in a dry skillet or the microwave.
- Divide the chicken slaw among the wraps, keeping it in a line down the center. Add avocado slices, if using.
- Fold in the sides, roll up tightly and cut in half. Serve at once, or wrap in baking paper for lunchboxes.
Tips
- Use a food processor with a grating disc, or a mandoline, to shred the cabbage finely. Fine shreds are easier to roll and eat.
- Stir a spoonful of peanut butter into the dressing, or swap the mustard for grated ginger and a few drops of toasted sesame oil, for a different flavor.
Questions and answers
Will chicken slaw wraps get soggy in a lunchbox?
Slightly, but less than wraps filled with lettuce. Wrap them tightly in baking paper, and keep the dressed slaw in a separate container if they need to last more than 4 hours.
Can I use a store-bought slaw mix?
Yes. A 300 g (10 oz) bag of coleslaw mix saves chopping time. Use the dressing as written.
Can I use tuna or beans instead of chicken?
Yes. Drained canned tuna or a can of roughly mashed chickpeas works well in place of the chicken.
