Chicken, Avocado and Lime Wraps

These wraps use cooked chicken, so they come together in 15 minutes and are a good way to use up leftover roast or poached chicken. Ripe avocado mashed with lime juice acts as the spread, which means there is no mayonnaise to buy. Crisp lettuce, tomato and red onion add crunch, and a pinch of cumin and chili ties it together. Wrap tightly in baking paper and they travel well for lunch.

Instructions

  1. Halve the avocados and scoop the flesh into a bowl. Mash with 2 tablespoons of the lime juice, the garlic, cumin, 1/2 teaspoon of the salt and the chili flakes until mostly smooth.
  2. Toss the chicken with the remaining lime juice, the remaining salt and the cilantro.
  3. Warm the wraps for 10 seconds each in a dry skillet or the microwave so they roll without cracking.
  4. Spread a quarter of the avocado mash down the center of each wrap, leaving a 3 cm (1 inch) border.
  5. Top with the chicken, lettuce, tomato and red onion.
  6. Fold in the sides, then roll up tightly from the bottom. Cut in half on the diagonal and serve.

Tips

  • Squeeze plenty of lime juice over the avocado straight away to slow browning. If you make the wraps ahead, wrap them tightly in baking paper and eat them within 8 hours.
  • Any cooked chicken works: roast, poached, grilled or leftover thighs. Add black beans or corn for more bulk.

Questions and answers

Can I make these wraps ahead for lunchboxes?

Yes. Roll them tightly, wrap in baking paper and refrigerate for up to 8 hours. The avocado keeps its color better with plenty of lime.

What can I use instead of flour wraps?

Corn tortillas, lettuce leaves, flatbread or pita all work. For a gluten-free option, use corn tortillas or large lettuce leaves.

How do I keep the wraps from getting soggy?

Pat the tomatoes dry and keep the lettuce dry. Spread the avocado out to the edges so it forms a barrier.
