Overnight oats are the easiest cold breakfast there is: mix, refrigerate and eat. The oats soak up milk and yogurt in the fridge, turning creamy and tender with no cooking at all. This base recipe makes four jars at once, so a few minutes on Sunday evening covers breakfast for most of the week. The chia seeds thicken the oats as they sit. Add the fruit and nuts when you serve, so they stay fresh and crunchy.
Instructions
- Combine the oats, milk, yogurt, chia seeds, maple syrup, vanilla, cinnamon and salt in a large bowl or jug. Stir well, making sure no dry oats are left at the bottom.
- Divide the mixture among four 350 ml (12 oz) jars or containers, about 225 ml (1 cup) in each. Stir each one once more.
- Cover and refrigerate for at least 6 hours, or overnight. The oats soften and the mixture thickens.
- In the morning, stir and loosen with a splash of milk if it is too thick. Top with the berries and nuts. Eat cold, or warm for 1 minute in the microwave.
Tips
- Use old-fashioned rolled oats. Instant oats turn mushy, and steel-cut oats stay too firm without cooking.
- Keep the fruit and nuts separate until you serve. The base keeps for 4 days in the fridge, but berries soften and nuts lose their crunch after a day.
