Cod Poached in Tomato Wine Broth with Leeks

Poaching in a flavored broth gives fish a delicate texture, and you get a built-in sauce as well. Here the broth starts with soft leeks and garlic, then tomatoes, white wine and thyme, simmered until it tastes round and bright. The cod needs only 6 to 8 minutes in the pan. Serve in wide bowls with boiled potatoes, or toasted bread for dipping.

Instructions

  1. Heat the oil in a wide, deep skillet over medium heat. Add the leeks with a pinch of the salt and cook for 6 to 8 minutes, stirring, until very soft but not browned. Add the garlic for 1 minute.
  2. Pour in the wine and simmer for 3 minutes to cook off the sharpness. Add the tomatoes, stock, thyme, bay leaf and half the remaining salt.
  3. Simmer uncovered for 10 minutes, until the broth is lightly thickened and tastes rounded.
  4. Pat the cod dry, season with the remaining salt and the pepper and slide the fillets into the broth. Spoon some broth over the top.
  5. Cover and cook at the gentlest simmer for 6 to 8 minutes, until the cod is opaque, flakes easily and reads 63°C (145°F).
  6. Remove the thyme stems and bay leaf. Stir in the lemon juice, scatter with parsley and serve in wide bowls with the potatoes.

Tips

  • Rinse the sliced leeks well in a bowl of water, because grit hides between the layers.
  • Add 200 g (7 oz) of mussels or peeled shrimp for the last 3 minutes to turn this into a seafood pot.
