Tart cranberry, sweet orange and a hint of rosemary make a mocktail that looks and tastes like a holiday table. A quick rosemary syrup adds a piney, herbal note that makes the drink taste more grown-up than a plain juice spritzer. Mix the base ahead and add sparkling water when guests arrive. It pairs well with rich food such as roast turkey, cheese boards and anything with gravy.
Instructions
- Combine the water, sugar and rosemary sprigs in a small pan. Heat, stirring, until the sugar dissolves, then simmer gently for 2 minutes.
- Take the pan off the heat and leave the rosemary to steep in the syrup for 15 minutes. Remove the sprigs and let the syrup cool.
- In a jug, stir together the cranberry juice, orange juice and rosemary syrup. Taste, and add a little more syrup if the juice is very tart.
- Refrigerate the base for at least 30 minutes, or up to 24 hours.
- Fill four glasses with ice. Pour in the juice base until each glass is about two thirds full, then top with the sparkling water.
- Garnish with an orange slice, a few cranberries and a rosemary sprig, and serve immediately.
Tips
- Use pure cranberry juice, which is tart, and rely on the rosemary syrup for sweetness. If you buy a sweetened cranberry juice drink, use only a little of the syrup.
- Freeze fresh cranberries in a single layer and use them as ice cubes. They keep the drink cold and look pretty.
Questions and answers
Can I make the rosemary syrup ahead?
Yes. It keeps for up to 2 weeks in a sealed jar in the fridge. Make a double batch for the holiday season.
Can I use thyme or sage instead of rosemary?
Yes. Thyme is the closest substitute. Sage is stronger and earthier, so use only half as much.
Can I make this drink in a big batch?
Yes. Multiply the recipe and mix the juice and syrup in a punch bowl. Add the sparkling water and ice just before serving.
