Creamy Avocado Lime Dressing

Ripe avocado makes a dressing that is creamy without any dairy or mayonnaise. Blended with lime juice, garlic, herbs and a little water, it turns pale green and pourable, and it stays fresh for a day or two. It is good on crisp lettuce, sliced cucumber, grain bowls, roasted sweet potatoes, chicken and fish. Use a properly ripe avocado, because an underripe one makes a dressing that is grassy and pasty.

Instructions

  1. Halve the avocado, remove the pit and scoop the flesh into a blender or a tall jug for a stick blender.
  2. Add the water, lime juice, olive oil, garlic, herbs, cumin, salt and pepper.
  3. Blend for 30 to 40 seconds, scraping down the sides once, until the dressing is completely smooth and pourable.
  4. Taste and adjust. Add salt for depth, lime for sharpness, or water a tablespoon at a time until it falls from a spoon in a thick ribbon.
  5. Use at once, or pour into a small jar, press plastic wrap directly onto the surface and refrigerate for up to 2 days.

Tips

  • Add a seeded jalapeño or a pinch of chili flakes to the blender for a spicy version.
  • The lime juice slows browning. If the surface darkens in the fridge, scrape off the top layer or stir it back in; the dressing underneath is fine.
