Remoulade is the all-purpose sauce of Danish cooking: mayonnaise stirred through finely chopped sweet and sour pickles, capers, herbs and a little curry powder, tinted pale yellow. It goes with fried plaice, cold roast beef on rye bread, fish cakes and hot dogs. It takes ten minutes to make and tastes better after a few hours in the fridge.
Instructions
- Drain the pickles and capers well, chop them very finely, about 3 mm (1/8 in), and blot them dry with paper towels.
- In a bowl, stir the mayonnaise with the curry powder, turmeric, mustard, lemon juice and pickle brine until smooth.
- Fold in the pickles, capers, onion, parsley and chives.
- Taste and adjust with salt, pepper and a little more lemon juice.
- Cover and chill for at least 1 hour, so the flavors blend.
Tips
- Chop the pickles very finely and blot them dry, or the sauce turns runny. A food processor works if you pulse briefly, but stop before they turn to mush.
- Turmeric gives the traditional pale yellow color. For a sharper sauce, add a little more pickle brine or lemon juice at the end, a few drops at a time.
