Pide are boat-shaped flatbreads with a filling in the middle and the edges folded up around it, baked on a very hot surface so the crust blisters. Kıymalı pide, with spiced minced beef, is among the most popular, and nearly every town has its pide shops. Fold carefully and pinch the ends so the filling stays put. It is meant to be eaten hot, cut into strips, with a glass of ayran.
Instructions
- Mix the flour, yeast, salt and sugar. Add the water and oil and knead for 10 minutes, until smooth and elastic. Cover and let rise for 1 hour, until doubled.
- Mix all the topping ingredients and knead for 2 minutes. Fry a teaspoon of the mixture in a small pan to check the seasoning.
- Heat the oven to 240°C (475°F) with a baking tray inside. Divide the dough into 4 balls and roll each into an oval about 30 cm (12 inches) long and 15 cm (6 inches) wide.
- Spread a quarter of the topping over each oval, leaving a 2 cm (3/4 inch) border. Fold the long edges up and in over the topping and pinch the two ends into points to make a boat.
- Brush the exposed dough with the egg yolk mixture.
- Slide the pides, on baking paper, onto the hot tray. Bake for 12 to 15 minutes, until the crust is golden and the meat is cooked through.
- Brush the edges with melted butter, cut into strips and serve hot.
Tips
- Keep the topping dry. Chop the vegetables finely and drain the tomato, because a wet filling leaves the base soggy.
- Other classic fillings are cubed meat, white cheese with parsley, or a cracked egg added for the last 3 minutes of baking.
