Creamy Sun-Dried Tomato and Spinach Chicken

This is a restaurant-style sauce made in one skillet in about 30 minutes. Sun-dried tomatoes add sweetness and a gentle sourness, spinach wilts into the cream at the end, and a handful of grated Parmesan thickens everything. Pound the chicken to an even thickness so the pieces cook at the same speed. Spoon the sauce over pasta, rice or mashed potatoes, and keep some bread nearby for the rest.

Instructions

  1. Pound the chicken breasts to an even 2 cm (3/4 inch) thickness. Season with half the salt, the pepper and the oregano.
  2. Heat 1 tablespoon of the oil in a large skillet over medium-high heat. Sear the chicken for 5 to 6 minutes per side, until golden and 74°C (165°F) inside. Rest it on a plate.
  3. Add the remaining oil, the garlic and the sun-dried tomatoes to the pan over medium heat. Stir for 1 minute until fragrant.
  4. Pour in the stock and scrape up the browned bits. Simmer for 4 minutes until reduced by about a third.
  5. Stir in the cream and simmer for 3 minutes. Whisk in the Parmesan until smooth, then season with the remaining salt.
  6. Add the spinach in handfuls, stirring until just wilted, about 1 minute. Stir in the lemon juice.
  7. Slice the chicken, return it to the pan with its juices and spoon the sauce over. Serve hot.

Tips

  • Use a spoonful of the oil from the jar for the first sear, since it is full of flavor. If your tomatoes are the dry kind, soak them in hot water for 10 minutes first.
  • Frozen spinach works too. Thaw it, squeeze out the water and add it with the cream so it heats through.

Questions and answers

Can I use chicken thighs instead of breasts?

Yes. Boneless thighs take 5 to 6 minutes per side and stay tender in the sauce. Cook them until they reach 74°C (165°F).

What can I serve with creamy sun-dried tomato chicken?

Pasta, rice, mashed potatoes or crusty bread all soak up the sauce. A simple green salad keeps the plate balanced.

Can I make it without cream?

Replace the cream with full-fat coconut milk, or thin 150 g of cream cheese with stock. The flavor shifts slightly but the sauce still thickens well.
