Crispy Oven-Baked Fish Sticks with Quick Tartar Sauce

Homemade fish sticks are made from real fillets, and they bake instead of fry, so they stay light. A flour, egg and panko coating gives the crunch, and a hot, preheated tray keeps the bottoms from going soft. The sticks cook in about 12 minutes. Children tend to love them with a simple dipping sauce, and adults appreciate the clean fish flavor.

Instructions

  1. Heat the oven to 230°C (450°F) and put a large baking sheet in to heat. Line a plate with parchment paper.
  2. Pat the fish dry and cut it into sticks about 2 cm (3/4 inch) wide and 8 cm (3 inches) long. Season with half the salt.
  3. Set up three shallow dishes: the flour in the first, the eggs beaten with the milk in the second, and the panko mixed with the paprika, garlic powder, pepper and remaining salt in the third.
  4. Coat each stick in flour, then egg, then panko, pressing the crumbs on firmly. Lay the sticks on the lined plate.
  5. Drizzle the oil over the hot baking sheet and arrange the sticks on it with space between them. Bake for 5 minutes, flip and bake for 5 to 7 minutes more, until golden and the fish flakes and reads 63°C (145°F).
  6. While they bake, stir the tartar sauce ingredients together. Serve the fish sticks hot with the sauce and lemon wedges.

Tips

  • Cut the sticks to an even size so they finish together. Cook thin tail pieces separately or fold them over.
  • For a gluten-free version, use gluten-free flour and crumbs, or crushed plain cornflakes.
