Crispy Roasted Broccoli with Garlic and Lemon

Roasted at a high heat, broccoli stops being a limp, boiled vegetable and becomes something with crisp, charred edges and a sweet, nutty center. The method is simple: dry florets, plenty of oil, a very hot oven and room on the tray. Garlic goes in halfway so it turns golden instead of bitter, and lemon at the end lifts everything. It takes 30 minutes and goes with almost any main dish.

Instructions

  1. Heat the oven to 230°C (450°F) with a large baking tray inside. A hot tray gives the broccoli a head start on browning.
  2. Cut the broccoli into florets of similar size, about 4 cm (1 1/2 inches) wide. Peel the tough stalk and slice it into coins if you like. Dry everything thoroughly with a towel.
  3. Toss the broccoli with the olive oil, salt and pepper in a large bowl until every piece is coated.
  4. Carefully spread the broccoli on the hot tray in a single layer, cut sides down where possible. Roast for 10 minutes.
  5. Take the tray out, scatter over the garlic and chili flakes, stir and return it to the oven for 8 to 10 minutes, until the tips are charred and the stems are tender when pierced.
  6. Squeeze over the lemon juice, scatter on the zest and serve straight away.

Tips

  • Dry broccoli roasts and wet broccoli steams. If you wash it, pat it very dry, and give the pieces space on the tray, using two trays if needed.
  • For a different flavor, finish with toasted pine nuts, a splash of balsamic vinegar, sesame seeds or a sprinkle of nutritional yeast.

Questions and answers

Why is my roasted broccoli soggy?

It was wet, crowded or roasted at too low a temperature. Dry it well, spread it in one layer and use a very hot oven, 220 to 230°C (425 to 450°F).

Can I roast frozen broccoli?

Yes. Roast it straight from frozen, without thawing, at 230°C (450°F) for 20 to 25 minutes. It will be softer than fresh but still browns at the edges.

How do I reheat roasted broccoli?

Reheat it in a hot oven or skillet for about 5 minutes to bring back some crispness. The microwave makes it soft.
