Frozen Pineapple Coconut Mocktail

This is the tropical frozen drink without the rum: sweet pineapple, rich coconut cream and a squeeze of lime, blended with ice until thick and slushy. Frozen pineapple does most of the work, so the drink is cold and creamy straight from the blender. It is a good choice for pool days and barbecues when children and adults want the same glass. Serve it with a wide straw and a pineapple wedge.

Instructions

  1. Stir the canned coconut cream well, since the thick cream sits on top, and measure out 80 ml (1/3 cup).
  2. Pour the pineapple juice, coconut cream and lime juice into the blender. Add the frozen pineapple and the ice.
  3. Blend on high for 60 seconds until smooth and thick like a slushy. Stop once to stir if the mixture sticks around the blades.
  4. Taste, and blend in the maple syrup if the pineapple is on the tart side.
  5. Pour into two chilled glasses and garnish each with a pineapple wedge and a lime slice. Serve immediately.

Tips

  • Chill the glasses in the freezer for 10 minutes first, so the drink stays frosty longer.
  • Light coconut milk gives a lighter drink, but it will be less creamy. Stir canned coconut products well before measuring.

Questions and answers

Can I use fresh pineapple?

Yes. Freeze the chunks for 3 hours first, or use fresh pineapple with 2 cups of ice. The drink will be a little thinner.

Can I make a big batch for a party?

Yes, but blend in batches and serve immediately, because the drink melts quickly. Pre-measure the ingredients into bags and freeze them for fast blending.

How do I stop the drink from separating?

Serve it right away and stir if it settles. Well-mixed coconut cream and fully frozen fruit help hold the texture.
