The mojito is Cuba's best-known cocktail: a tall, cold, minty drink made from white rum, lime, sugar, mint and soda water. In Cuba the mint used is hierbabuena, a mild spearmint, and the drink is built in the glass rather than shaken. The sugar and mint are muddled gently to release the oils without bruising the leaves, then lime, rum, ice and soda water go in. It is lighter than most rum drinks and is best made one at a time, just before serving.
Instructions
- Put the mint leaves, sugar and lime juice in a tall glass. Press gently with a muddler or wooden spoon 5 or 6 times to release the mint oils and dissolve the sugar. Do not shred the leaves.
- Add the rum and stir briefly.
- Fill the glass with crushed ice and top with the soda water.
- Stir from the bottom up, add more ice if needed, and garnish with the mint sprig. Serve with a straw.
Tips
- Use spearmint, not peppermint, which tastes like toothpaste. Slap the garnish sprig against your hand before adding it to release its aroma.
- For a stronger drink, use 60 ml (2 fl oz) rum, which adds about 65 calories. For an alcohol-free mojito, leave out the rum and add a little more soda water.
