Green bean casserole is a fixture on the American Thanksgiving table, usually made with condensed soup and canned fried onions. This version makes everything from scratch, which takes about the same time and tastes fresher: green beans in a creamy mushroom sauce, topped with onions you crisp in the oven. It can be assembled a day ahead, which leaves less to do on the big day.
Instructions
- Heat the oven to 200°C (400°F). Toss the sliced onions with the flour, oil and salt and spread them in one layer on a parchment-lined baking sheet. Bake for 20 to 25 minutes, stirring once, until deep golden and crisp. Set aside and lower the oven to 190°C (375°F).
- Boil the green beans in salted water for 4 minutes, until bright green and just tender. Drain, plunge into ice water and drain again.
- Melt the butter in a large skillet over medium-high heat. Cook the mushrooms for 8 to 10 minutes until browned and the liquid has evaporated. Add the chopped onion and garlic and cook for 3 minutes.
- Sprinkle in the flour and stir for 1 minute. Whisk in the stock and cream, add the thyme, salt, pepper and nutmeg, and simmer for 5 minutes until thick.
- Fold the green beans into the sauce and pour into a 2 L (2 qt) baking dish. Bake for 20 minutes, until bubbling.
- Scatter the crispy onions over the top and bake for 5 minutes more. Serve hot.
Tips
- Assemble the casserole without the onions up to a day ahead, cover and refrigerate. Add 10 minutes to the baking time and top with the crispy onions at the end.
- Frozen cut green beans can stand in. Thaw and pat them dry, then skip the boiling step.
Questions and answers
Can I make green bean casserole ahead of time?
Yes. Assemble it up to 1 day ahead without the onion topping, cover and refrigerate. Bake for 25 to 30 minutes, then add the onions for the last 5 minutes.
Can I use canned mushroom soup instead?
Yes. One 295 g (10.5 oz) can of condensed cream of mushroom soup mixed with 60 ml (1/4 cup) of milk replaces the homemade sauce, though the flavor is less fresh.
Can I freeze green bean casserole?
It is better not to, since the beans turn soft and the cream sauce can separate. Refrigerate leftovers for up to 3 days.
