Foil packets are the easiest way to cook fish outdoors, because nothing sticks to the grate and nothing falls through it. The vegetables steam alongside the fish and pick up lime and smoked paprika. Set the packets over medium heat, close the lid and cook for about 15 minutes. They work on a campfire grate, a charcoal barbecue or in a 200°C (400°F) oven when the weather turns.
Instructions
- Heat a grill with a lid to medium, about 190°C (375°F). Tear off four sheets of heavy-duty foil, each about 40 cm (16 inches) long.
- In a bowl, toss the zucchini, corn, tomatoes, garlic, 2 tbsp of the oil, the paprika and half the salt.
- Divide the vegetables among the foil sheets. Pat the fish dry, season with the remaining salt and the pepper and set a fillet on each pile.
- Drizzle the fish with the remaining oil and the lime juice. Fold the foil over and crimp the edges to seal tightly, leaving air space inside.
- Place the packets on the grill, close the lid and cook for 12 to 15 minutes. Open one carefully to check that the fish is opaque, flakes and reads 63°C (145°F), and that the vegetables are tender.
- Open the packets away from your face, as the steam is hot. Scatter with cilantro and serve with lime wedges.
Tips
- Use heavy-duty foil, or double two layers of regular foil, so the packets do not tear when you move them.
- To cook in the oven instead, bake the packets on a tray at 200°C (400°F) for 15 to 18 minutes.
Questions and answers
Can I cook foil packet fish over a campfire?
Yes. Set the packets on a grate over hot coals, not directly in the flames, and turn them once. Allow 12 to 15 minutes.
Can I use frozen fish fillets?
Thaw them first in the fridge so they cook evenly. Frozen fish releases water and can overcook the vegetables.
Can I use other vegetables in the packets?
Yes. Bell peppers, asparagus, green beans or thinly sliced potatoes (boiled for 5 minutes first) all work. Keep the pieces a similar size.
