Green beans cooked hot and fast in a lightly oiled pan blister at the edges and keep a little snap, which is just what you want against crumbled pork. The pork is browned until it has crispy bits, then seasoned with garlic, ginger and a soy-based sauce. A little more than 20 minutes of work gives you a dish that is even better over rice. Add as much chili as your household can take.
Instructions
- Stir together the soy sauce, rice vinegar, sugar, sesame oil and water in a small bowl.
- Heat 1 tbsp of the oil in a wok or large skillet over high heat. Add the green beans and cook, stirring only now and then, for 5 to 6 minutes until blistered and tender but still crisp. Move them to a plate.
- Add the remaining oil and the pork. Cook for 5 to 6 minutes, breaking it into small crumbs, until browned and crisp in places and no pink remains.
- Add the garlic, ginger, chili flakes and the white parts of the spring onions and stir for 30 seconds.
- Return the beans to the pan, pour in the sauce and toss for 2 minutes, until the sauce reduces and clings to the beans and pork.
- Top with the green spring onion and serve over steamed rice.
Tips
- For a deeper flavor, add 1 tbsp of chili bean paste with the garlic and reduce the soy sauce slightly.
- Frozen green beans work in a pinch. Cook them straight from frozen and allow about 2 extra minutes.
Questions and answers
Can I use ground chicken or turkey?
Yes. They are leaner, so add an extra teaspoon of oil when browning and take care not to overcook them.
How do I keep green beans bright green in a stir-fry?
Cook them in a very hot pan for a short time and do not cover the pan. Overcooking turns them dull and gray-green.
How spicy is this stir-fry?
With 1/2 tsp of chili flakes it is mildly warm. Use 1/4 tsp for children, or add a spoonful of chili paste for more heat.
