Ground Turkey and Sweet Potato Skillet

Sweet potato and ground turkey balance each other: the potato is sweet and soft, the turkey is savory and lean, and smoked paprika bridges the two. Everything cooks in one skillet in about 30 minutes, with the potato steamed under a lid first so it softens before browning. Spinach goes in at the end. Spoon the mixture into containers for lunches, or top it with a fried egg for a quick dinner.

Instructions

  1. Heat 1 tablespoon of the oil in a large deep skillet over medium-high heat. Add the turkey with half the salt, the paprika, cumin and pepper. Cook for 6 to 8 minutes, breaking it up, until browned. Move it to a bowl.
  2. Add the remaining oil to the pan, then the onion, pepper and sweet potatoes. Cook for 4 minutes, stirring, until the onion softens.
  3. Add the garlic and cook for 30 seconds. Pour in the water and add the remaining salt.
  4. Cover and cook over medium-low heat for 10 to 12 minutes, until the sweet potatoes are tender when pierced.
  5. Uncover and raise the heat. Cook for 2 to 3 minutes until any liquid has gone and the potatoes start to brown.
  6. Return the turkey with the spinach and stir for 2 minutes until the spinach wilts. Stir in the lime juice, taste and serve with cilantro.

Tips

  • Cut the sweet potatoes small and even so they soften during the covered stage. Leave the skin on for more fiber if you like.
  • Top with a fried egg, sliced avocado or a spoonful of yogurt, and add a can of black beans for extra protein and fiber.
