The Western or Denver omelet is a diner favorite for a reason: sweet sautéed onion, peppers and salty ham inside a soft egg wrapper with melted cheese. The filling is cooked first, so the vegetables are tender and the omelet stays light instead of watery. This recipe makes two omelets, and the filling can be prepared in advance. It also works as a quick supper with a green salad and toast.
Instructions
- Melt 1 tbsp butter in a 25 cm (10 inch) nonstick skillet over medium heat. Cook the onion and peppers for 5 minutes, until soft. Add the ham and cook for 2 minutes more, until lightly browned at the edges. Tip onto a plate.
- Whisk 3 of the eggs with 1 tbsp of the milk and a pinch each of salt and pepper until smooth.
- Wipe out the pan, melt 1 tbsp of the remaining butter over medium heat and pour in the eggs. Stir gently for 20 seconds, then let them set for about 1 1/2 minutes, lifting the edges so raw egg runs underneath.
- While the top is still slightly wet, scatter half the cheese and half the filling over one side. Fold the omelet over and cook for 30 seconds more, then slide it onto a plate.
- Repeat with the remaining butter, eggs, milk, cheese and filling to make the second omelet. Serve at once, with toast if you like.
Tips
- Cook the vegetables first and keep them warm. Raw peppers and onion added to the eggs release water and leave the omelet soggy.
- Swap the ham for cooked sausage, crisp bacon or smoked turkey, and the peppers for mushrooms, tomatoes or spinach.
Questions and answers
Is a Western omelet the same as a Denver omelet?
Yes. The two names describe the same omelet of eggs, diced ham, bell pepper and onion. Cheese is optional but common.
Can I make the omelet filling ahead?
Yes. Cook the onion, peppers and ham up to 3 days ahead, refrigerate, and reheat the filling in the pan before you make the omelets.
Why does my omelet get watery?
Raw vegetables and wet fillings release liquid as they cook. Sauté vegetables first, drain any liquid, and pat tomatoes or mushrooms dry before adding them.
