Homemade Fruit Gummies

Homemade fruit gummies are chewy, bright and made from just juice, honey and gelatin. They set in about an hour in the fridge and can be poured into silicone molds or a pan and cut into squares. Use 100 percent fruit juice for flavor and color. Because they contain gelatin they are not vegetarian, and fresh pineapple, kiwi and papaya must be avoided, because their enzymes stop the gel from setting.

Instructions

  1. Line a 20 cm (8 inch) square pan with baking paper, or set out silicone molds on a tray.
  2. Pour half of the juice (120 ml) into a small saucepan and sprinkle the gelatin evenly over the top. Leave it for 5 minutes, until the gelatin looks spongy.
  3. Add the rest of the juice and the honey. Warm over low heat for 3 to 4 minutes, stirring, until the gelatin has fully dissolved and no grains remain. Do not let it boil.
  4. Take the pan off the heat and stir in the lemon juice. Skim off any foam from the surface.
  5. Pour the mixture into the pan or molds. Chill for at least 1 hour, until completely firm.
  6. Lift out the set sheet and cut it into 2 cm (3/4 inch) squares with a sharp knife, or pop the gummies out of the molds. Store in the fridge.

Tips

  • Avoid fresh pineapple, kiwi and papaya juice. Their enzymes break down gelatin so the gummies never set, although canned or heat-treated versions are fine.
  • For firmer, chewier gummies, use 1 extra tablespoon of gelatin, or let the cut squares air-dry on a rack in a cool room for 6 to 8 hours before storing.

Questions and answers

Can I make fruit gummies without gelatin?

Not with this recipe. For a vegan version, boil 2 teaspoons of agar powder with the juice for 2 minutes. The gummies will be firmer and less chewy.

How long do homemade gummies keep?

In an airtight container with baking paper between the layers they keep for 1 week in the fridge. If they turn sticky, toss them with a pinch of cornstarch.

Why did my gummies not set?

The gelatin may not have been bloomed first, the mixture may have boiled, or the juice may have contained fresh pineapple, kiwi or papaya. Re-melt it, add 1 more tablespoon of bloomed gelatin and chill again.
