Honey Garlic Baked Salmon

Baked salmon with a honey and garlic glaze is one of the most reliable weeknight dinners. The glaze thickens in the oven and caramelizes at the edges while the fish stays moist inside. This version uses a hot oven and a short bake, so the fillets are done in about 12 minutes. Serve it with rice, roasted potatoes or a green salad, and spoon any pan juices over the top.

Instructions

  1. Heat the oven to 220°C (425°F) and line a rimmed baking sheet with parchment paper. Pat the salmon dry with paper towels and set the fillets on the sheet, skin side down, with a little space between them.
  2. Whisk the honey, garlic, lemon juice, olive oil, mustard, salt and pepper in a small bowl until smooth.
  3. Spoon about two thirds of the glaze over the fillets and spread it to the edges. Keep the rest for later.
  4. Bake for 12 to 14 minutes, depending on thickness. The salmon is done when the flesh turns opaque and flakes easily with a fork, or reads 63°C (145°F) at the thickest point.
  5. For a deeper color, brush on the reserved glaze and slide the sheet under a hot broiler (grill) for 1 minute. Watch closely so the honey does not burn.
  6. Rest the fillets for 3 minutes, then scatter with parsley and serve with lemon wedges and the pan juices.

Tips

  • Thin tail pieces cook faster than thick center cuts. Fold thin ends under, or start checking at 9 minutes, so nothing dries out.
  • Swap the honey for maple syrup, or add a pinch of chili flakes to the glaze for a mild kick.

Questions and answers

Can I make honey garlic salmon ahead of time?

Mix the glaze up to 3 days ahead and keep it in the fridge. Cooked salmon keeps for 2 days in a covered container and is good cold on salads or reheated gently at 120°C (250°F) for 10 minutes.

Can I use frozen salmon fillets?

Yes. Thaw them overnight in the fridge, then pat very dry before glazing. Cooking from frozen also works, but add 5 to 7 minutes and skip the broiler step.

What should I serve with baked salmon?

Steamed rice, roasted potatoes or buttered noodles soak up the glaze well. Add roasted broccoli, green beans or a cucumber salad for a full plate.
