Honey Garlic Shrimp and Broccoli Stir-Fry

A stir-fry rewards preparation: cut everything first, mix the sauce and have the rice going, because the actual cooking takes about 8 minutes. The shrimp are seared hot and fast, the broccoli is steamed briefly in the pan so it stays bright green, and a sauce of honey, garlic and soy thickens with a little cornstarch. Spoon it over steamed rice and eat right away.

Instructions

  1. Rinse the rice and cook it with 600 ml (2 1/2 cups) water for 12 to 15 minutes. Keep it covered and warm.
  2. Whisk the sauce ingredients together in a small bowl, making sure the cornstarch dissolves.
  3. Pat the shrimp dry. Heat 1 tbsp of the oil in a large skillet or wok over high heat until it just smokes. Cook the shrimp in a single layer for 1 minute per side, until pink and lightly browned. Move them to a plate.
  4. Add the remaining oil and the broccoli. Stir-fry for 2 minutes, then add the water, cover and steam for 2 minutes, until the broccoli is bright green and just tender.
  5. Uncover and add the garlic, ginger and half of the spring onions. Stir for 30 seconds, until fragrant.
  6. Stir the sauce again and pour it in. Cook for 1 minute, until it bubbles and turns glossy.
  7. Return the shrimp and toss for 30 seconds, until they are opaque all the way through (63°C / 145°F). Top with the remaining spring onions and serve over the rice.

Tips

  • Pat the shrimp very dry. Water on the surface lowers the pan temperature, so they steam instead of browning.
  • Snow peas, bell peppers or sliced mushrooms can replace some of the broccoli, and a pinch of chili flakes adds heat.
