Htamin jaw is the Burmese way of turning leftover rice into dinner. Instead of heavy soy sauce, the seasoning is light: lots of garlic fried until golden, a little fish sauce, white pepper and sometimes a pinch of turmeric. Peas, carrot and scrambled egg round it out, and the plate is finished with a squeeze of lime, slices of raw onion and fresh chili. It is simple, fragrant and ready in about 30 minutes.
Instructions
- Break up the cold rice with your fingers so there are no clumps.
- Heat the oil in a large wok over medium heat. Fry the garlic for 1 to 2 minutes until pale gold. Scoop out half the garlic with a slotted spoon and set aside for topping.
- Add the carrot to the wok and stir for 2 minutes, then add the peas for 1 minute.
- Push the vegetables to one side, pour the eggs into the cleared space and scramble for 30 seconds until just set. Mix them through the vegetables.
- Turn the heat to high. Add the rice, turmeric, fish sauce, salt and pepper and toss for 4 to 5 minutes, until the rice is hot and lightly toasted in places.
- Stir in the spring onions. Pile onto plates, scatter with the reserved garlic and serve with lime wedges, red onion and chili.
Tips
- Day-old rice fries best. If you only have fresh rice, spread it on a tray and chill it in the fridge for 30 minutes first.
- To add protein, fry 200 g (7 oz) diced chicken first until it reaches 74°C (165°F), or add a handful of small peeled prawns with the vegetables.
