Ohn no khao swe is a creamy, golden noodle soup of chicken in coconut milk, thickened with toasted chickpea flour. Cooks in Myanmar serve it with wheat noodles and a spread of toppings: boiled egg, crisp fried onion, fresh coriander, chili and a squeeze of lime. The soup is mild and rich rather than hot, so each person adds chili at the table. It makes a satisfying dinner and reheats well.
Instructions
- Heat the oil in a large pot over medium heat. Cook the onion for 8 minutes until golden, then add the garlic and ginger for 1 minute.
- Stir in the turmeric, paprika and chili powder for 30 seconds. Add the chicken and cook for 4 minutes, stirring, until it turns pale.
- Pour in the stock and simmer for 15 minutes until the chicken is tender and reaches 74°C (165°F).
- Toast the chickpea flour in a dry pan for 2 minutes until nutty. Whisk it into 120 ml (1/2 cup) cold water until smooth.
- Stir the flour mixture into the soup and simmer for 8 to 10 minutes, stirring, until silky and thick enough to coat a spoon.
- Add the coconut milk, fish sauce and salt and simmer gently for 5 minutes. Do not boil hard.
- Cook the noodles according to the packet, then drain. Divide among bowls, ladle over the soup and top with eggs, fried onions, coriander, chili and lime.
Tips
- No chickpea flour? Whisk 1 tablespoon of cornstarch into cold water instead. The soup will be smooth but lose the nutty note.
- Keep the soup and noodles separate when storing. The soup keeps 3 days in the fridge, but noodles go soft in the broth.
