Huevos Motuleños (Yucatecan Eggs on Tortillas)

Huevos motuleños come from Motul, a town in Yucatán, and are one of the most colorful breakfasts in Mexico. Crisp corn tortillas are spread with black beans and topped with fried eggs, then covered in a warm tomato salsa with ham and peas. Fried plantain slices and crumbled cheese go on the side. It is hearty enough to count as lunch, and a good way to use up leftover beans.

Instructions

  1. Blend the tomatoes, onion, serrano and garlic until smooth.
  2. Heat 1 tbsp oil in a saucepan over medium-high heat. Pour in the salsa, which will spatter, and cook for 8 minutes until darker and slightly thick. Season with the salt, stir in the ham and peas, and keep warm.
  3. Heat 3 tbsp of the oil in a skillet over medium heat. Fry the plantain slices for 2 to 3 minutes per side until deep golden. Drain on paper towels.
  4. In the same pan, fry each tortilla for about 10 seconds per side until softened with a few crisp spots. Keep them warm.
  5. Spread about 2 tbsp of warm black beans on each tortilla and set two on each plate.
  6. Add the last 1 tbsp of oil to the pan and fry the eggs over medium heat for 2 to 3 minutes until the whites are set and the yolks are runny. Season with salt.
  7. Put two eggs on each pair of tortillas, spoon over the warm salsa with ham and peas, and add the plantain and cheese. Serve immediately.

Tips

  • Choose a ripe plantain that is mostly yellow with black spots. It fries up sweet and caramelized. Green plantains turn starchy.
  • To make the beans, mash canned black beans with a little oil and a pinch of salt in a hot pan for about 5 minutes.
