Maple Pecan Wedges

Toasted pecans and maple syrup give these wedges a warm, caramel-like flavor without any spices. Butter is rubbed into the flour, a little cream and maple go into the dough, and the whole thing is patted into a round and cut. A thin maple glaze finishes them. They are good at brunch, with coffee, or wrapped up as a small gift.

Instructions

  1. Heat the oven to 200°C (400°F). Spread the pecans on a baking sheet and toast for 6 to 8 minutes, until fragrant. Cool, chop coarsely and line the sheet with parchment paper.
  2. Whisk the flour, brown sugar, baking powder and salt in a large bowl. Rub in the cold butter with your fingertips until the mixture looks like coarse crumbs. Stir in the pecans.
  3. Whisk the egg, 45 ml of maple syrup and 60 ml of cream together. Add to the bowl and stir with a fork until a shaggy dough forms.
  4. Tip the dough onto a floured counter, knead 3 or 4 times and pat it into a round about 18 cm (7 inches) wide and 3 cm (1 1/4 inches) thick.
  5. Cut the round into 8 wedges and place them 3 cm (1 inch) apart on the sheet. Brush the tops with the extra cream.
  6. Bake for 18 to 22 minutes, until golden brown and a toothpick in the center comes out clean.
  7. Cool on a rack for 10 minutes. Stir the icing sugar with 1 tablespoon of maple syrup, adding a few drops of water if needed, and drizzle it over the warm wedges.

Tips

  • Use real maple syrup. Pancake-style syrups are mostly corn syrup and do not give the same flavor.
  • Walnuts or hazelnuts work in place of pecans. Add 1/2 teaspoon of cinnamon to the flour for extra warmth.

Questions and answers

Should I use dark or light maple syrup?

Either works. Dark, robust syrup gives a stronger maple flavor, which stands up better to baking.

Can I freeze maple pecan wedges?

Yes. Freeze the baked, unglazed wedges for up to 2 months. Warm them in a 160°C (325°F) oven for 8 minutes and glaze before serving.

Why did my wedges spread flat?

The butter was probably warm or the dough too wet. Keep the butter cold, handle the dough lightly and chill the cut wedges for 15 minutes if the kitchen is warm.
