Hutspot met Klapstuk (Dutch Carrot and Onion Mash with Beef)

Hutspot is a Dutch mash of potatoes, carrots and onions, with carrots making up the biggest share, so the mash turns orange and sweet. The traditional partner is klapstuk, a cut of beef short rib or brisket simmered until it falls apart, with its broth as gravy. Some cooks serve it with smoked sausage or meatballs instead. Mash it by hand, so the vegetables keep some texture.

Instructions

  1. Put the beef, halved onion, bay leaves, peppercorns, salt and water in a heavy pot. Bring to a boil, skim off the foam, then cover and simmer gently for 2 to 2 1/2 hours until the meat pulls apart easily.
  2. About 45 minutes before the beef is ready, put the potatoes, carrots and sliced onions in a second pot, cover with water, add 1 tsp salt and boil for 30 to 35 minutes until very tender.
  3. Drain the vegetables, keeping 1 cup (250 ml) of the cooking water.
  4. Return the vegetables to the pot and add the butter and hot milk. Mash coarsely with a masher, adding a splash of the cooking water to make it moist but still chunky. Season with pepper and more salt if needed.
  5. Lift the beef out and rest it for 10 minutes. Strain 250 ml (1 cup) of the broth into a small pan and boil it for 5 minutes to concentrate it into a gravy.
  6. Pull or slice the beef into thick pieces.
  7. Serve the hutspot with the beef on top and a spoonful of gravy.

Tips

  • For deeper flavor, boil the vegetables in 500 ml (2 cups) of the beef broth, topped up with water, instead of plain water.
  • Mash by hand, never with a blender, so the carrots keep some bite. Cooking the sliced onions in a little butter first gives a sweeter taste.
