Huzarensalade is a chunky, creamy Dutch salad of diced potato, cooked beef, beetroot, pickles, apple and egg in a mustard dressing. The beetroot turns it pale pink, and it is garnished with sliced egg, tomato and parsley. It is served on festive tables and buffets, and as a filling for bread rolls. It is best made a day ahead, so the flavors blend.
Instructions
- Put the potatoes in a pot, cover with cold salted water, bring to a boil and cook for 15 to 20 minutes until just tender when pierced with a knife. Drain and cool completely.
- Lower the eggs into a separate pot of boiling water and cook for 10 minutes. Cool in cold water, then peel. Chop 2 eggs and slice 1 for the garnish.
- Cut the cooled potatoes into 1 cm (1/2 in) dice. Place them in a large bowl with the beef, beetroot, gherkins, pickled onions, apple and chopped eggs.
- Stir the mayonnaise, yogurt, mustard, pickle brine, salt and pepper together in a small bowl.
- Fold the dressing gently into the salad with a spatula until everything is coated and pale pink. Taste and adjust with salt, pepper or a little more pickle brine.
- Cover and chill for at least 2 hours, ideally overnight.
- Pile the salad into a serving bowl, smooth the top and garnish with the egg slices, tomato wedges and parsley.
Tips
- No leftover beef? Simmer a 400 g (14 oz) piece of beef chuck in salted water with a bay leaf for 1 1/2 to 2 hours until tender, cool it in its broth, then dice it.
- Dress the salad only once the potatoes are completely cold, because warm potatoes soak up the dressing and turn mushy. Fold gently so the pieces stay in chunks.
