Kålrotstappe (Norwegian Swede Mash)

Kålrotstappe is Norwegian swede mash, the classic partner for pinnekjøtt at Christmas and for salted and smoked meats all winter. Swede, carrot and a little potato are boiled soft and mashed with butter and hot milk, giving a golden, slightly sweet and earthy side dish. It is simple, cheap and much better than its plain looks suggest. Make it while the meat rests.

Instructions

  1. Put the swede, carrots and potato in a large pot, cover with cold water, add a generous pinch of salt and bring to a boil.
  2. Simmer for 20 to 25 minutes, until the swede is completely soft and a knife slides in without resistance.
  3. Drain well and leave the vegetables to steam dry in the colander for 2 minutes.
  4. Return them to the pot and mash with the butter and hot milk until smooth, or leave slightly chunky if you like.
  5. Season with the 1/2 tsp salt, white pepper and nutmeg, then serve hot.

Tips

  • Let the boiled vegetables steam dry before mashing. Swede holds a lot of water, and wet mash tastes bland and loose.
  • The potato makes the mash creamier and balances the swede's slight bitterness. Use more carrot for a sweeter mash.
