Kartoffelsuppe (German Potato Soup with Sausage)

Kartoffelsuppe is the potato soup of German home kitchens, made in a single pot with bacon, carrot, leek, celeriac and plenty of marjoram. Part of it is mashed to thicken the broth, and sliced frankfurter-style sausages go in at the end. It is cheap, filling and better the next day. Serve it with dark bread and a splash of vinegar at the end.

Instructions

  1. Fry the bacon in the oil in a large pot over medium heat for 5 minutes until crisp. Lift out half the bacon and set it aside for topping.
  2. Add the onion to the pot and cook for 4 minutes. Add the carrots, leek and celeriac and cook for 5 minutes, stirring.
  3. Add the potatoes, broth, bay leaves and marjoram. Bring to a boil, then simmer for 20 minutes until the potatoes are very soft.
  4. Remove the bay leaves. Mash about a third of the soup against the side of the pot with a potato masher so the broth thickens.
  5. Add the sausages and heat for 5 minutes until hot throughout. Season with the nutmeg, vinegar, salt and pepper.
  6. Ladle into bowls and top with parsley and the reserved bacon.

Tips

  • Floury potatoes break down and thicken the soup. Use a mix of floury and waxy potatoes if you want some pieces to stay whole.
  • For a meatless soup, skip the bacon and sausages, cook the onion in butter and add a pinch of smoked paprika. Use vegetable broth.
